Oregano is THE Sicilian herb, perfect for pizza, dipping oils, tomato sauces, lamb dishes, seafood. It is essential to the classic Sicilian sauce Salmoriglio. Use in marinades and salad dressings. It actually originated in Greece and came to Sicily when the island was under Greek rule; the name means "joy of the mountain" because it grows well at high altitudes. This version is still on the stems, for an usual presentation. Most of the oregano we can get in the US is Mexican oregano, which is quite good, but milder in flavor than the Mediterranean type. Use a little less of this more fragrant version until you have adjusted to it.
